Hope everyone had a fun but safe Cinco de Mayo. We wanted to enjoy Margaritas on Cinco de mayo but as you know the pre-made Margarita mix is loaded with sugar. We found a recipe on the net for a low carb margarita. I can’t remember where I got it from. The recipe turned out to be great. I actually enjoyed it more than the pre-made stuff. The pre-made mix is way too sweet for me. This was still sweet but not over the top.
Here is the recipe we used: (I wish I could remember the site so I can give them credit. If I can find the site I will post later.)

Ingredients:
1/2 tsp orange extract
1 packet Splenda (or 2 tsp powdered)
1 tsp water
1 shot tequila
1/8 tsp lime juice
1/4 tsp lemon juice
Mix together the orange extract, Splenda and water. This pretty much is the curocao – orange extract is up to 85% alcohol. Put crushed ice into a shaker and pour this liquid over the ice. Now add in 1 shot tequila, plus the lemon and lime juice. Shake thoroughly and pour into a glass.

Ingredients:
Fresh Mint 2 sprigs
Half a fresh lime
12 drops Sweet 10 sugar substitute
Crushed ice
2 oz Bacardi Rum
Splash club soda
Mixing instructions:
Muddle 2 mint sprigs and three lime wedges with a sugar substitute in the bottom of a tall glass. When the ingredients are well pulverized, add ice to fill the glass. Add the rum and a splash of club soda. Stir very well.
You have just made a low carb mojito that taste great!

I enjoy a good Martini. The great news for me is the drink has no carbs but does have approximately 156 calories per serving. A couple warnings, if you are in phase one of the South Beach Diet you are really not supposed to have any alcohol.
When I was in phase one of the diet, I cheated once and had a martini at our Valentine’s Day dinner. The drink did not slow my weight loss down one bit. So it’s up to you but I had to warn you.
My Tasty Martini Recipe:
Ingredients:
2 1/2 oz Tanqueray Gin
1/2 oz dry vermouth (Martini & Rossi)
Ice
Prepare the Martini Glass:
Pour the vermouth into a chilled Martin glass and swish around to coat the glass.
Pour out the vermouth. You just want a coating on the glass.
Mix the Gin:
Fill Shaker with cracked ice.
Pour Gin into shaker
Shake 10 times
Strain Gin into the chilled vermouth coated glass.
Garnish with a martini olive
Enjoy!
